Banging Bacon wrapped potatoes.

This is an easy way to please a crowd with simple ingredients.



Preheat your oven to 350*f


Ingredients

1/3 of a bunch parsley - minced

1 bunch of chives -minced chives

(mix chives in with parsley)

Chicken Stock

5 or 6 minced garlic cloves ( who are we kidding use at least10)

Spice mix - 1 tablespoon each of garlic powder, onion powder, salt and pepper.

You also need one pack of thick cut bacon (we like Costco's)

One bag of Dutch yellow potatoes.


Instructions

Wash and dry your potatoes.

Par boil the potatoes and cool (we like to use chicken stock with a little cracked black pepper added)

Lay out the strips of bacon on a flat surface or cutting board. (If you want you can add a little butter on the strip of bacon because who doesn't like butter) cut in half - half a strip will cover one potato

Sprinkle the bacon with your spice mix followed by the garlic and the minced herbs

Place a potato on the end of the bacon strip and wrap the bacon around the potato.

Stick a toothpick where the two ends of the bacon meet to make sure it all stays together.

Bake in the oven for around 30-35 minutes.

Halfway through the cooking process you should flip the potatoes over to ensure even baking. The potato should be soft in the middle and your bacon crispy.

Serve alongside a jalapeno dipping sauce (below) and enjoy.

Jalapeno dip.

3 minced Jalapeno's

8 0z pkg of cream cheese

1 cup of plain Greek yogurt

1 cup of shredded sharp cheddar

3 green onion, finely sliced

I tsp of garlic powder

1 tsp of onion powder

salt and pepper to taste


Beat cream cheese to soften, then add your yogurt. Mix until combined then add the rest of your ingredients. This is one is a major crowd pleaser! We hope you like it.
